Ingredients
Method
- Add the cold milk to a medium mixing bowl.
- Sprinkle the sugar-free pudding mix evenly over the milk.
- Whisk for 1 to 2 minutes, until the mixture is smooth, glossy, and slightly thickened.
- Add the thawed sugar-free Cool Whip to the bowl.
- Gently fold with a spatula until the mixture is light, fluffy, and no streaks remain.
- Cover the bowl and refrigerate for 20 to 30 minutes, until the mousse is softly set.
- Spoon the mousse into 4 serving cups.
- Serve as is, or top with berries, a dusting of cocoa powder, or sugar-free chocolate shavings.
Notes
- Make sure the milk is well chilled so the pudding thickens quickly.
- Fold gently instead of stirring vigorously to keep the mousse light and airy.
- For a thicker, pipeable mousse, refrigerate for 2 to 3 hours before serving.
- Store leftovers covered in the refrigerator for up to 3 days; do not freeze.
