  • 1 cup sugar-free Cool Whip thawed (about 250 ml)
  • 1 box sugar-free instant pudding mix about 1 oz, any flavor
  • 3/4 cup cold milk about 180 ml, skim, almond, or cashew milk

Method
 

  1. Add the cold milk to a medium mixing bowl.
  2. Sprinkle the sugar-free pudding mix evenly over the milk.
  3. Whisk for 1 to 2 minutes, until the mixture is smooth, glossy, and slightly thickened.
  4. Add the thawed sugar-free Cool Whip to the bowl.
  5. Gently fold with a spatula until the mixture is light, fluffy, and no streaks remain.
  6. Cover the bowl and refrigerate for 20 to 30 minutes, until the mousse is softly set.
  7. Spoon the mousse into 4 serving cups.
  8. Serve as is, or top with berries, a dusting of cocoa powder, or sugar-free chocolate shavings.

Notes

- Make sure the milk is well chilled so the pudding thickens quickly.
- Fold gently instead of stirring vigorously to keep the mousse light and airy.
- For a thicker, pipeable mousse, refrigerate for 2 to 3 hours before serving.
- Store leftovers covered in the refrigerator for up to 3 days; do not freeze.
