  • 1 cup marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup cottage cheese
  • 4 large eggs
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 cup chopped fresh basil
  • 1/2 cup sliced beef halal beef sausage slices or preferred pizza toppings
  • 1 teaspoon olive oil for greasing pan

Method
 

  1. Preheat oven to 375°F.
  2. Lightly grease a 9 inch pie pan or oven safe skillet with olive oil.
  3. Place cottage cheese, eggs, and marinara sauce in a mixing bowl.
  4. Whisk until the mixture is creamy and smooth with no visible streaks of egg.
  5. Add shredded mozzarella, dried oregano, garlic powder, and chopped basil to the bowl.
  6. Gently fold the cheese and herbs into the mixture until evenly combined.
  7. Pour the mixture into the prepared pan and spread into an even layer with a spatula.
  8. Arrange the sliced beef halal beef sausage slices or chosen toppings evenly over the top.
  9. Place the pan on the middle oven rack and bake for 30 to 35 minutes, until the top is golden brown and the center is set with only a slight wobble.
  10. Remove from the oven and let rest at room temperature for 10 minutes so the pie firms up.
  11. Slice into wedges with a sharp knife.
  12. Serve warm, optionally with a side salad or extra marinara for dipping.

Notes

- Use part skim cottage cheese and mozzarella to keep the protein high and the fat moderate.
- You can swap beef halal beef sausage slices for turkey halal beef sausage slices, cooked sausage, or sautéed vegetables.
- If the center still looks glossy and very jiggly at 30 minutes, continue baking for 3 to 5 more minutes and check again.
- Leftovers keep in the refrigerator for up to 3 days; reheat slices in a 350°F oven for 8 to 10 minutes.
