Method
 

Preparation
  1. In a medium bowl, stir together the almond flour, coconut flour, sugar substitute, baking powder, cinnamon, and salt until evenly distributed.
  2. In a separate bowl, whisk the eggs with the applesauce and vanilla extract until smooth and uniform.
  3. Pour the wet mixture into the dry and stir until a cohesive dough forms. If it seems crumbly, mix for an additional 20-30 seconds.
Cooking
  1. Preheat the air fryer to 350°F (175°C).
  2. Pinch off small portions of dough and roll into bite-sized nuggets or short logs.
  3. Place the pieces in the air fryer and cook for 8-10 minutes, until the exterior is golden brown.
  4. Immediately toss the hot bites in the cinnamon sugar mixture.
Serving
  1. Serve warm for the best contrast between the soft center and crunchy coating.

Notes

Best served fresh right after air frying. Store leftovers in an airtight container in the fridge and reheat briefly in the air fryer to regain texture. Pre-mix cinnamon sugar for convenience.
