Preparation
- Toast the bread under a broiler or in a hot pan for about 2-3 minutes per side until golden brown.
- Bring a pot of water to a gentle boil, lower the eggs in carefully, and boil for 6-7 minutes. Then transfer to an ice bath.
- While the eggs cool, mash the avocado in a bowl, adding salt, pepper, and lemon juice.
Assembly
- Peel and slice the eggs, and spread the mashed avocado on the toasted bread.
- Top with the egg slices, ensuring the yolks are exposed.
- Sprinkle with additional salt, pepper, and optional chili flakes before serving.
Notes
Make ahead by boiling eggs in advance. Store the mashed avocado in an airtight container.
