  • 2 slices Whole Grain Bread
  • 2 large Eggs For boiling
  • 60 g Avocado Ripe
Seasoning
  • to taste Salt
  • to taste Pepper
  • splash Lemon Juice For freshness
  • to taste Chili Flakes (optional) For additional heat

Method
 

Preparation
  1. Toast the bread under a broiler or in a hot pan for about 2-3 minutes per side until golden brown.
  2. Bring a pot of water to a gentle boil, lower the eggs in carefully, and boil for 6-7 minutes. Then transfer to an ice bath.
  3. While the eggs cool, mash the avocado in a bowl, adding salt, pepper, and lemon juice.
Assembly
  1. Peel and slice the eggs, and spread the mashed avocado on the toasted bread.
  2. Top with the egg slices, ensuring the yolks are exposed.
  3. Sprinkle with additional salt, pepper, and optional chili flakes before serving.

Notes

Make ahead by boiling eggs in advance. Store the mashed avocado in an airtight container.
