Ingredients
  

Pudding Base
  • 1/2 cup chia seeds Chia seeds thicken the pudding.
  • 2 cups almond milk (or any milk of choice) Use any milk that you prefer.
  • 1 teaspoon vanilla extract Adds flavor to the pudding.
  • Pinch dash salt Enhances flavor.
  • 2 tablespoons honey or maple syrup (optional) Sweetener is optional based on preference.
Fruit Addition
  • 1 cup fresh blueberries Fold in right before serving to keep them fresh.

Method
 

Preparation
  1. In a bowl, combine the chia seeds, almond milk, honey or maple syrup (if using), vanilla extract, and a pinch of salt. Stir very well to wet every chia seed.
  2. Let the mixture sit for about 10 minutes to give the chia a head start on absorbing liquid.
  3. Stir the mixture again to ensure an even consistency, breaking up any clumps.
  4. Cover and refrigerate for at least 2 hours or overnight until thickened to a pudding-like consistency.
  5. Just before serving, gently fold in the fresh blueberries.
  6. Serve chilled in a bowl or jar.

Notes

For best results, do not skip the 10-minute resting period and the second stir before chilling. This prevents clumps and ensures a creamy texture.
