- In a mixing bowl, blend together the Greek yogurt, honey or maple syrup, and vanilla extract until the mixture is smooth and creamy.
- Gently fold in the fresh blueberries, being careful not to crush them to preserve their shape.
- Spoon the yogurt mixture into ice cube trays or silicone molds, filling each cavity evenly for consistent bites.
- If you like, sprinkle some granola or nuts on top of each bite for added texture.
- Freeze the molds for several hours or until the yogurt bites are completely solid.
- Once frozen, pop out the bites and store them in an airtight container in the freezer for an easy and healthy snack or dessert.
Notes
Use fresh blueberries for the best flavor; do not overmix to preserve the integrity of the blueberries. These bites can be stored in an airtight container in the freezer for up to a month.
