Preparation
- Preheat your waffle iron according to the manufacturer’s instructions to a medium-high setting.
- In a mixing bowl, whisk together the almond flour, cocoa powder, sugar substitute, baking powder, and salt until well combined.
- In another bowl, whisk the eggs with the almond milk and vanilla until smooth and slightly glossy.
- Pour the wet ingredients into the dry ingredients and mix until no dry streaks remain.
Cooking
- Lightly spray the waffle iron with cooking spray.
- Pour the batter into the waffle iron, spreading to an even layer but do not overfill.
- Cook the waffles for 3–6 minutes, until firm and slightly crispy.
- Carefully remove the waffles and serve warm, or crisp them further by returning to the iron for 30–60 seconds.
Notes
Cool waffles completely before storing in an airtight container in the fridge for up to 3 days. For long-term storage, freeze flat on a baking sheet.
