Method
 

Preparation
  1. Set a large skillet over medium heat and add a thin drizzle of olive oil.
  2. Add the sliced smoked sausage and cook until the edges are browned.
Cooking
  1. Add the diced onion and bell pepper to the skillet, and cook until they soften.
  2. Add the minced garlic and cook until fragrant.
  3. Sprinkle in the Cajun seasoning and stir, then pour in the chicken broth and add the penne.
  4. Bring everything to a boil, then reduce heat to simmer and cover the skillet.
  5. Cook for 10-12 minutes, stirring occasionally, until the pasta is tender and liquid has reduced.
Finishing Touches
  1. Reduce heat to low, stir in the heavy cream and shredded cheddar until melted and smooth.
  2. Season with salt and pepper to taste.
  3. Serve hot, garnished with parsley if desired.

Notes

Store leftovers in an airtight container. Reheat gently to keep the sauce creamy.
