Method
 

Preparation
  1. Load the food processor with medjool dates, shredded carrots, walnuts, chia seeds, shredded coconut, cinnamon, nutmeg, salt, and vanilla extract.
  2. Pulse until a thick, sticky dough forms. If the mixture looks loose, continue pulsing until it becomes tacky and cohesive.
Forming the Balls
  1. Scoop out portions of the mixture and roll them between your palms into compact balls, pressing firmly to avoid crumbling.
  2. Roll the balls in the extra shredded coconut until evenly coated.
Chilling
  1. Place the balls in the fridge for at least 1 hour to set, until they feel firmer and less sticky.

For optimal results, ensure even texture in the mixture, roll tightly, and allow proper chilling time. Variations include adjusting spices or skipping the coconut coating.
