For the bites
  • 2 cups leftover mashed potatoes Use already made mashed potatoes.
  • 1 cup shredded cheese (cheddar or your choice) Make sure the cheese is shredded for even mixing.
  • 1/2 cup breadcrumbs Any type of breadcrumbs can be used.
  • 2 large eggs Binds the mixture together.
  • 1/4 cup chopped green onions Optional for added flavor.
  • to taste Salt and pepper Important for seasoning.
  • as needed Cooking spray or oil for greasing To prevent sticking.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine leftover mashed potatoes, shredded cheese, breadcrumbs, eggs, green onions (if using), salt, and pepper.
  3. Mix until the mixture is evenly combined, with no streaks of egg or dry pockets.
  4. Scoop and roll the mixture into small, bite-sized balls. If the mixture is sticky, lightly oil your hands.
  5. Grease a baking sheet with cooking spray or oil and arrange the balls with space between them.
Baking
  1. Bake for 20–25 minutes until the bites are golden and feel set when nudged with a spatula.
  2. Serve warm for best texture.

Notes

These cheesy mashed potato puff bites are best served fresh from the oven. Allow for even baking by shaping the puff bites to a uniform size and giving adequate space on the baking sheet.
