  • 1 cup roasted cherries Ensure cherries are well-roasted for enhanced sweetness

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. In a large bowl, melt the butter, then mix in the granulated sugar until fully combined.
  3. Add the eggs one at a time, mixing in the vanilla extract, until the mixture is creamy and smooth.
  4. In another bowl, whisk together the flour, cocoa powder, and salt until well mixed.
  5. Gradually combine the dry ingredients with the butter mixture, mixing gently until just combined — be careful not to over-mix.
  6. Fold in the roasted cherries until evenly distributed in the brownie batter.
  7. Pour the batter into the prepared baking dish, spreading it evenly with a spatula.
Baking
  1. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  2. Once baked, allow to cool in the pan before slicing into squares to serve warm.

Notes

For best results, allow brownies to cool slightly before slicing to maintain their shape. Leftover brownies can be reheated briefly in the microwave.
