Preparation
  1. In a food processor, combine the Medjool dates, pumpkin puree, cocoa powder, and vanilla extract. Blend until the mixture is smooth and well incorporated; it should be thick and cohesive.
  2. If you’re adding nuts, pulse the mixture a few times to break them down into smaller pieces. Stop when it’s mixed but still retains some texture.
  3. Taste the mixture, and if desired, sprinkle in a pinch of salt to elevate the flavors.
Shaping
  1. With clean hands, scoop out portions of the mixture and roll them into small balls, about 1 inch in diameter.
  2. If you’d like additional texture, roll some of the balls in shredded coconut until fully coated.
Chilling
  1. Arrange the chocolate date balls on a baking sheet or plate and refrigerate for at least 30 minutes to allow them to set and firm up.

Notes

For a smoother texture, blend the mixture longer until it’s creamy. Chill the balls thoroughly to help them hold their shape and enhance flavors. Feel free to experiment with spices like cinnamon or nutmeg.
