Preparation
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, whisk together the flour, baking powder, sugar, cinnamon, and salt.
- Using a pastry cutter, cut in the cold butter until the mixture resembles coarse breadcrumbs.
Mixing Dough
- Gently fold in the heavy cream into the flour mixture until just combined, being careful not to overwork the dough.
- If the dough is too sticky, sprinkle a little flour as needed.
Shaping and Baking
- Transfer the dough onto a lightly floured surface and gently pat into a circle about 1-inch thick.
- Cut into wedges and place on a baking sheet lined with parchment paper.
- Brush the tops with additional heavy cream for a golden finish.
- Bake for 15-20 minutes or until golden brown.
Notes
These scones can be frozen before baking; just bake them straight from the freezer and increase the baking time slightly.
