Wet Ingredients
  • 1/2 cup Unsalted butter Cold and cut into small pieces.
  • 3/4 cup Heavy cream Brushed on top for a golden finish.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, whisk together the flour, baking powder, sugar, cinnamon, and salt.
  3. Using a pastry cutter, cut in the cold butter until the mixture resembles coarse breadcrumbs.
Mixing Dough
  1. Gently fold in the heavy cream into the flour mixture until just combined, being careful not to overwork the dough.
  2. If the dough is too sticky, sprinkle a little flour as needed.
Shaping and Baking
  1. Transfer the dough onto a lightly floured surface and gently pat into a circle about 1-inch thick.
  2. Cut into wedges and place on a baking sheet lined with parchment paper.
  3. Brush the tops with additional heavy cream for a golden finish.
  4. Bake for 15-20 minutes or until golden brown.

Notes

These scones can be frozen before baking; just bake them straight from the freezer and increase the baking time slightly.
