  • 4 large eggs
  • 1 cup cottage cheese
  • 1 cup chopped vegetables (e.g., spinach, bell peppers, onions)
  • 1 cup shredded cheese (e.g., cheddar or mozzarella)
  • to taste Salt

  • as needed Cooking spray or oil for greasing the muffin tin

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and position a rack in the middle.
  2. Grease a standard muffin tin with cooking spray or oil.
  3. In a large mixing bowl, whisk together the eggs and cottage cheese until the mixture is fairly smooth and slightly glossy.
  4. Stir in the chopped vegetables and shredded cheese. Season with salt and pepper to taste.
  5. Pour the mixture evenly into the greased muffin tin, filling each cup about 2/3 full.
Baking
  1. Bake in the preheated oven for 20-25 minutes, until set and slightly golden on top.
  2. Allow the bites to cool in the tin for a few minutes before removing.

Notes

These bites can be made ahead of time and store well in the fridge for up to 4 days. They reheat quickly and can be varied by adding pre-cooked protein or swapping out vegetables and cheeses as desired.
