Prepare the Filling
- In a bowl, combine shredded chicken, mayonnaise, chopped celery, chopped onion, and fresh herbs. Mix well to create a creamy filling.
Assembling the Puffs
- Roll out the puff pastry on a lightly floured surface and cut it into squares.
- Spoon a portion of the chicken mixture onto the center of each square.
- Fold the pastry over the filling and seal the edges, making sure there are no openings.
- Brush the tops with egg wash for a golden finish.
Baking
- Preheat the oven to 400°F (200°C).
- Place the puffs on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until the pastry is golden brown.
Serving
- Allow the puffs to cool slightly before serving. They are best warm and can be paired with a side salad or fresh veggies.
Notes
You can prepare the chicken salad filling a day in advance. Make a double batch of puffs and freeze them unbaked; bake directly from the freezer when needed. Experiment with different proteins or spices for variety.
