Preparation
  1. In a large bowl, whisk together the flour, cocoa powder, baking powder, salt, and sugar until evenly combined.
  2. In a separate bowl, mix the milk, egg, and melted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients, stirring gently until just combined; avoid overmixing.
Cooking
  1. Preheat a non-stick skillet or griddle over medium heat and lightly grease it.
  2. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on the surface.
  3. Flip the pancakes carefully and cook for an additional 2 minutes, or until puffed and lightly browned.
  4. Remove the pancakes from the skillet and keep them warm in a low oven while you repeat with the remaining batter.
  5. Drizzle with chocolate sauce just before serving.

Notes

Don’t overmix the batter for fluffy pancakes. Adjust heat as needed and experiment with add-ins like chocolate chips.
