Method
Preparation
- Slice the bananas into thick coins about 1/2 inch each, aiming for 16-20 coins.
- Arrange the banana coins on a parchment-lined baking sheet in a single layer and freeze for 15-20 minutes.
Assembly
- Spread about 1/2 teaspoon peanut butter on each frozen banana coin.
- Sprinkle each coated bite with chopped peanuts and optionally sea salt, or any desired add-ins.
Coating
- In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in 15-second bursts until melted and smooth.
- Drizzle or dip the banana bites in the melted chocolate for your preferred coating thickness.
Freezing & Serving
- Return the tray to the freezer for 30-60 minutes until the chocolate is hard and the bananas are frozen solid.
- Let the bites sit at room temperature for 5 minutes before serving.
Storage
- Store leftovers in a freezer-safe container to avoid freezer odors.
Notes
For best results, follow the precautions against common mistakes: slice bananas thickly, freeze briefly before assembly, and avoid overheating the chocolate.
