- In a mixing bowl, combine the almond flour, unsweetened cocoa powder, and a pinch of salt. Stir until uniform.
- In a second bowl, stir together the nut butter (peanut or almond), maple syrup (or agave), and vanilla extract until smooth.
- Add the dry mixture into the wet mixture and mix until fully combined. The dough should resemble thick brownie batter.
- If using chocolate chips or nuts, fold them in gently just until evenly distributed.
- Scoop out the mixture and form into balls or shape into cookie rounds. Press them down gently if you prefer a flatter look.
- Place the cookies on a parchment-lined tray and refrigerate for at least 30 minutes to set.
- Enjoy straight from the fridge for the fudgiest texture.

Store cookies in the refrigerator once set. They are no-bake and meant to be served chilled.
