  • 1 lb large shrimp, peeled and deveined, tails on or off
  • 2 tbsp olive oil
  • 4 cloves garlic, minced very finely
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/3 cup Parmesan cheese, finely grated
  • 1/2 tsp kosher salt, plus more to taste
  • 1/4 tsp black pepper
  • 1 pinch red pepper flakes (optional) For added heat
  • 1 tbsp lemon juice, plus wedges for serving
  • 2 tbsp fresh parsley, chopped (optional) For garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or foil for quick cleanup.
  2. Pat the shrimp very dry with paper towels, then transfer to a mixing bowl.
  3. Add the olive oil, minced garlic, dried oregano, dried basil, Parmesan, kosher salt, and black pepper. Toss until the shrimp look evenly coated.
  4. Spread the shrimp on the prepared baking sheet in a single layer, leaving a little space between pieces to avoid steaming.
Cooking
  1. Roast the shrimp for 6 to 9 minutes, or until they are pink, opaque, and just firm.
  2. Drizzle with lemon juice right after pulling them out of the oven.
  3. Sprinkle with parsley if using, and serve hot with lemon wedges.

Notes

For best results, ensure the shrimp are dried thoroughly before seasoning. For a spicier dish, increase red pepper flakes to taste. Serve immediately for optimal flavor and texture.
