Preparation
- Preheat the oven to 350°F (175°C). Grease a loaf pan well.
- In a large bowl, mash the ripe bananas until mostly smooth, leaving a few small lumps if desired.
- Stir in the Greek yogurt and vanilla extract until combined.
- Gradually add the self-rising flour, mixing gently until no dry flour remains.
- If using, stir in the cinnamon and pinch of salt until just combined.
- Pour the batter into the greased loaf pan and smooth the top.
Baking
- Bake for 45–50 minutes, until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For best results, use bananas that are heavily speckled. Wait until the bread is fully cooled before slicing to ensure a tender crumb.
