- In a bowl, whisk together the unsweetened almond milk, cocoa powder, sweetener, vanilla extract, and salt until smooth and uniform.
- Stir in the chia seeds thoroughly to ensure they are evenly distributed.
- Allow the mixture to sit for about 10 minutes to thicken slightly.
- After 10 minutes, stir the pudding again to break up any clumps of chia seeds.
- Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours, or preferably overnight.
- Serve chilled with your choice of toppings.
Notes
Store leftover pudding in an airtight container in the fridge for up to 3-4 days. This pudding does not freeze well. For extra flavor, add a tablespoon of espresso powder.
