- In a small pot over medium heat, combine the coconut oil, maple syrup, and nut butter. Stir continuously until the mixture is completely smooth and combined.
- Once smooth, add in the cocoa powder. Mix well until there are no lumps remaining in the mixture.
- Remove the pot from the heat and stir in the oats until the mixture is thick but moldable.
- Using a spoon, drop heaping tablespoons of the mixture onto a cookie sheet lined with wax paper, forming cookie shapes.
- Place the cookie sheet in the freezer for about 20 minutes, or until the cookies are set.
- After setting, store the cookies in the refrigerator or freezer, depending on your preference.
Notes
Use natural nut butter for the best flavor and texture. Chill properly to ensure cookies hold their shape. You can adjust sweetness and try different mix-ins for variety.
