Ingredients
  

Main Ingredients
  • 1 cup coconut milk Chilled for best results
  • 1 cup strawberries, hulled and sliced Fresh is recommended, but frozen can be used
  • 1-2 tablespoons sugar or sweetener, to taste Adjust sweetness as desired
  • 1/2 cup ice For serving
Garnish
  • to taste fresh mint Optional, for garnish

Method
 

Preparation
  1. Place the sliced strawberries in a blender. Blend until you achieve a smooth puree.
  2. Add coconut milk and your chosen sweetener into the blender. Blend again until fully incorporated.
  3. In a tall glass, add ice cubes, filling it about halfway.
  4. Slowly pour the blended mixture over the ice.
  5. Finish with fresh mint leaves on top for garnish.

Notes

Serve chilled, and it pairs well with light snacks. Store in the fridge for up to two days; stir before serving. Avoid freezing.
