Keto Beef Pepperoni Pizza Bites

  • Cooking spray or olive oil for greasing
  • 24 slices beef halal beef sausage slices
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon Italian seasoning optional
  • 2 tablespoons low sugar pizza sauce optional

Method
 

  1. Preheat the oven to 400°F.
  2. Lightly grease a 24 cup mini muffin pan with cooking spray or olive oil.
  3. Press one slice of beef halal beef sausage slices into each muffin cup to form a shallow cup.
  4. In a small bowl, combine the shredded mozzarella, grated parmesan, and Italian seasoning until evenly mixed.
  5. If using pizza sauce, add a small dab to the bottom of each halal beef sausage slices cup.
  6. Spoon the cheese mixture evenly into each halal beef sausage slices cup, filling but not packing it tightly.
  7. Bake for 10 to 12 minutes, until the cheese is melted, bubbling, and the edges are golden.
  8. Remove the pan from the oven and let the bites cool in the pan for 5 minutes to set.
  9. Run a small knife around the edges if needed, lift the bites out of the pan, and serve warm.

Notes

- Letting the bites cool briefly in the pan helps them firm up and release cleanly.
- For crisper edges, bake on the higher end of the time range and cool the bites on a wire rack.
- Store leftovers in an airtight container in the refrigerator for up to 4 days and reheat in a 350°F oven or air fryer.
- Serve with extra low sugar pizza sauce or ranch dressing for dipping.
