Ingredients
  

For the crust
  • 2 cups almond flour
  • 1/2 cup cocoa powder
  • 1/4 cup sweetener of choice granulated
  • 1 stick unsalted butter, melted
For the filling
  • 1 cup heavy cream
  • 8 oz cream cheese, softened to avoid lumps
  • 1/4 cup powdered sweetener
  • 1 teaspoon vanilla extract
  • 1 cup sugar-free chocolate chips
  • 1 cup unsweetened almond milk optional
  • 1 teaspoon espresso powder optional, for deeper flavor

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Prepare your baking dish.
  2. In a bowl, combine the almond flour, cocoa powder, sweetener, and melted butter. Mix until crumbly.
  3. Press the crust mixture firmly into the bottom of your baking dish.
  4. Bake for 10–12 minutes until set. Cool completely.
Filling
  1. Beat the heavy cream in a bowl until stiff peaks form.
  2. In another bowl, beat the softened cream cheese with powdered sweetener and vanilla until smooth.
  3. Gently fold the whipped cream into the cream cheese mixture to keep it fluffy.
  4. Spread half of the cream cheese mixture over the cooled crust and smooth the top.
  5. Sprinkle half of the chocolate chips over the cream layer.
  6. Spread the remaining cream mixture over the chips and top with the remaining chips.
Chilling
  1. Refrigerate for at least 4 hours before slicing.

Notes

For clean slices, ensure the crust is completely cooled before adding the filling. Slice when fully chilled.
