  • 1 cup cooked rice Can be substituted with another cooked grain.
  • 1 cup low-sodium cream of chicken soup Key for the creamy texture.
  • 1 cup low-fat shredded cheese Ensure it's a variety that melts well.
  • 1/2 cup low-sodium chicken broth Adds moisture to the casserole.
  • 1/2 teaspoon black pepper Adjust according to taste.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon olive oil Drizzle on top for better bubbling.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and lightly grease a casserole dish.
  2. In a large bowl, mix the shredded chicken, cooked rice, broccoli, cream of chicken soup, chicken broth, black pepper, garlic powder, and onion powder until well combined.
  3. Transfer the mixture to the greased casserole dish, spreading it into an even layer.
  4. Sprinkle the shredded cheese evenly over the top.
  5. Drizzle olive oil on top of the cheese.
Baking
  1. Cover the dish with foil and bake for 30 minutes.
  2. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbling.
  3. Let it cool for a few minutes before serving.

Notes

This recipe can be prepped ahead and stored in the refrigerator before baking. Ensure broccoli is cut into small florets for even cooking. Adjust the pepper amount to your taste preference.
