Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, stir together the applesauce, brown sugar (or sweetener), and vanilla until well combined without streaks.
  3. In another bowl, mix the rolled oats, whole wheat flour, baking soda, cinnamon, and salt until evenly distributed.
  4. Gradually add the dry mixture to the wet mixture, stirring just until combined. Fold in raisins or chocolate chips, if using.
  5. Spoon tablespoon-sized portions onto the prepared baking sheet, spacing them out.
Baking
  1. Bake for 10–12 minutes, until the edges are lightly golden and the tops look set.
  2. Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

For best texture, avoid overmixing the dough. Store cookies in an airtight container in the fridge to maintain softness. They improve in flavor after a day, especially with raisins or cinnamon.
