  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs Add one at a time.

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda Helps with leavening.
  • 1/2 teaspoon salt

  • 1 cup mini marshmallows Adds chewy surprise.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy, about 2-3 minutes.
  3. Beat in the eggs one at a time, incorporating each before adding the next, then mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry mixture to the creamed mixture until just combined.
  6. Fold in the chocolate chips and mini marshmallows gently.
Baking
  1. Drop tablespoons of dough onto ungreased baking sheets, spacing them apart.
  2. Bake for 10-12 minutes until edges are golden and centers are soft.
  3. Allow cooling on baking sheets for a few minutes before transferring to wire racks.

Notes

For softer cookies, slightly underbake them. Use parchment paper to prevent sticking.
