- In a mixing bowl, add the softened cream cheese, Greek yogurt, sugar substitute, and vanilla extract.
- Stir (or mix) until the mixture looks creamy and uniform, with no visible streaks of cream cheese.
- Add the pureed strawberries and fold until the color is even and the mixture looks consistent throughout.
- Pour the cheesecake mixture into your pre-made crust. Use a spatula to smooth the top into an even layer.
Chilling
- Chill for at least 4 hours, or until the center feels set when gently tapped.
- Once set, top with whipped cream and additional strawberries if desired, then slice and serve cold.
Notes
This cheesecake can be made ahead of time, and is perfect for potlucks and gatherings. Store in the refrigerator until serving. Not recommended to freeze for best texture.
