Preparation
- Preheat your oven to 375°F (190°C) and lightly grease mini muffin tins.
- In a bowl, prepare your pancake batter according to package instructions or your recipe.
- If using pre-cooked sausage, ensure they are warm and cut into bite-sized pieces.
Assembly
- In each muffin cup, add a small spoonful of pancake batter.
- Add a piece of sausage on top of the batter and then cover with another spoonful of pancake batter.
- Do not overfill the muffin tins to prevent batter from spilling.
Baking
- Bake in preheated oven for 15-20 minutes, until the tops are golden and a toothpick comes out clean.
- Once done, let them cool slightly before removing from the muffin tins.
Notes
These bites can be stored in an airtight container in the refrigerator for up to four days. They can also be frozen for later use. Consider serving with maple syrup or honey mustard for dipping.
