Preparation
- Pat the steak dry if it’s damp, then season both sides generously with salt and pepper.
- Set a large skillet over medium-high heat and add the olive oil. Wait until the oil is shimmering before adding the steak.
Cooking
- Add the steak to the skillet and cook for about 4–5 minutes per side, until a deep brown crust forms.
- Transfer the steak to a plate and let it rest while you finish the green beans.
- In the same skillet, melt the butter and add the minced garlic, cooking just until fragrant.
- Add the trimmed green beans and toss to coat in the garlic butter. Cook for 5–7 minutes, stirring occasionally, until the beans are tender but still have a bite.
- Add the lemon zest and juice, stirring to combine.
- Slice the rested steak against the grain and serve it over the green beans, drizzling any remaining garlic butter over the top.
Notes
Best enjoyed immediately after cooking. Leftovers can be stored in an airtight container in the fridge. Reheat gently to avoid toughening the steak.
