Ingredients
  

Dough Ingredients
  • 1.5 cups warm water Make sure it's warm, not hot, for yeast activation.
  • 2 tablespoons granulated sugar
  • 1 packet active dry yeast
  • 4 cups all-purpose flour
  • 1 teaspoon salt
Baking Soda Bath & Toppings
  • 0.25 cups baking soda Used in the boiling water.
  • 1 large egg For egg wash.
  • coarse sea salt For sprinkling.

Method
 

Preparation
  1. In a large bowl, combine the warm water and granulated sugar, then sprinkle in the active dry yeast. Let it stand for about 5 minutes, until the surface looks foamy and frothy.
  2. Add the all-purpose flour and salt to the bowl. Mix until a shaggy dough forms without dry flour pockets.
  3. Turn the dough out onto a floured surface and knead for about 5 minutes until it’s smooth and elastic.
  4. Place the dough back in the bowl, cover, and let it rise in a warm place for 1 hour, until puffy.
  5. Preheat the oven to 450°F (232°C).
Boiling & Baking
  1. Bring a large pot of water to a boil, then carefully add the baking soda.
  2. Divide the dough into small pieces and roll them into bite-sized balls.
  3. Boil the dough balls in batches in the baking soda water for about 30 seconds. Lift them out and place them on a baking sheet.
  4. Beat the egg and brush it over each boiled dough bite, then sprinkle with coarse sea salt.
  5. Bake for 10-12 minutes until the pretzel bites are golden brown and shiny.
  6. Serve warm with your favorite dipping sauce.

Notes

Store any leftovers in the fridge and reheat in a hot oven. Best enjoyed the day they're made.
