Ingredients
  

Dry Ingredients
  • 1 cup All-purpose flour
  • 1/2 cup Cocoa powder Unsweetened
  • 1 cup Sugar-free sweetener Use as per package instructions
  • 2 tsp Baking powder
  • 1/4 tsp Salt
Wet Ingredients
  • 2 large Eggs
  • 1 cup Milk Use non-dairy if preferred
  • 1/2 cup Oil Vegetable or coconut oil
  • 1 tsp Vanilla extract

Method
 

Preparation
  1. Grease your cake pan well (and line it if you prefer easier removal). Preheat the oven as directed.
Mix Dry Ingredients
  1. In a large bowl, whisk together the flour, cocoa powder, sugar-free sweetener, baking powder, and salt until no cocoa pockets remain.
Combine Wet Ingredients
  1. In a second bowl, whisk the eggs, milk, oil, and vanilla until smooth.
Make the Batter
  1. Pour the wet mixture into the dry ingredients and stir just until no dry flour remains. The batter should be glossy.
Bake
  1. Pour the batter into the prepared pan and bake according to your recipe's timing. Done when a tester comes out clean or with a few moist crumbs.
Cool and Frost
  1. Let the cake cool briefly in the pan, then transfer to cool completely before frosting. Spread frosting over the cooled cake and let it set.

Notes

Cake can be made ahead of time and stored in the refrigerator to maintain moisture. Serve slices chilled for the best cutting results.
