Ingredients

  • 1/2 cup unsalted butter, softened For richness
  • 3/4 cup granulated sugar substitute (erythritol or monk fruit blend) For sweetness without sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Add-ins
  • 3/4 cup sugar-free chocolate chips For pockets of chocolate flavor
  • 1/4 cup chopped nuts Optional
  • 1–2 tablespoons unsweetened milk If needed for dough consistency

Method
 

Preparation
  1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream the softened butter and sugar substitute until light and fluffy.
  3. Mix in the egg and vanilla extract until smooth and glossy.
Mixing
  1. Add in the flour, baking soda, and salt, stirring just until combined.
  2. Fold in the chocolate chips and nuts, adding milk as needed to reach the right dough consistency.
Baking
  1. Scoop tablespoon-sized portions onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for 10–12 minutes, until edges are lightly golden and centers look set but pale.
  3. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store baked cookies in an airtight container for up to 4 days. For longer storage, freeze cookies for up to 3 months.
