Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet.
  2. In a medium bowl, stir together the almond flour, coconut flour, baking soda, and salt.
  3. In a second bowl, combine the unsweetened applesauce, melted coconut oil, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until no dry pockets remain.
  5. Fold in the sugar-free chocolate chips.
Baking
  1. Scoop tablespoon-sized portions onto the prepared baking sheet, leaving space between each.
  2. Flatten slightly with fingers or a spoon.
  3. Bake for 10–12 minutes until lightly golden and set on top.
  4. Cool on the baking sheet before transferring to a wire rack.

Notes

Make sure to flatten the cookie dough before baking, as these won't spread much. Store cooled cookies in a covered container to keep them fresh.
