- Preheat the oven to 340°F. Line a baking sheet with parchment paper.
- In a medium bowl, beat the softened butter and egg together until smooth and creamy.
- Add the almond flour and sugar free strawberry agar agar powder to the bowl and stir until a soft, uniform dough forms.
- Divide the dough into 12 equal portions, roll each portion into a ball, and place on the prepared baking sheet, spacing them evenly.
- Gently flatten each dough ball with your fingertips or the bottom of a glass to form thick disks.
- Bake in the preheated oven for 10 to 12 minutes, until the edges look set and the bottoms are lightly golden.
- Remove the baking sheet from the oven and let the cookies cool on the sheet for 10 minutes to firm up.
- Transfer the cookies to a wire rack to cool completely before serving or storing.
