  • 1 cup almond flour 120 g
  • 1 packet sugar free strawberry agar agar powder about 0.3 oz or 8 to 10 g
  • 1 large egg
  • 4 tablespoons unsalted butter softened (60 g)

Method
 

  1. Preheat the oven to 340°F. Line a baking sheet with parchment paper.
  2. In a medium bowl, beat the softened butter and egg together until smooth and creamy.
  3. Add the almond flour and sugar free strawberry agar agar powder to the bowl and stir until a soft, uniform dough forms.
  4. Divide the dough into 12 equal portions, roll each portion into a ball, and place on the prepared baking sheet, spacing them evenly.
  5. Gently flatten each dough ball with your fingertips or the bottom of a glass to form thick disks.
  6. Bake in the preheated oven for 10 to 12 minutes, until the edges look set and the bottoms are lightly golden.
  7. Remove the baking sheet from the oven and let the cookies cool on the sheet for 10 minutes to firm up.
  8. Transfer the cookies to a wire rack to cool completely before serving or storing.

Notes

- Make sure the butter is softened, not melted, so the dough holds together and the cookies keep their shape.
- The cookies will feel soft when they first come out of the oven but will firm up as they cool, so avoid overbaking.
