Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the sliced peaches with the sugar substitute and vanilla extract. Mix well and spread the peach mixture evenly in a greased baking dish.
- In another bowl, mix together the almond flour, oats, cinnamon, baking powder, and salt.
- Pour the melted butter into the dry ingredients and mix until the mixture resembles coarse crumbs.
Baking
- Evenly sprinkle the crumb mixture over the peaches in the baking dish.
- Bake for about 30-35 minutes, or until the topping is golden brown and the peaches are bubbly.
- Let the cobbler cool slightly before serving to allow the juices to thicken.
Notes
Store any leftovers in an airtight container in the refrigerator for up to three days. To reheat, place individual servings in the microwave for about 20-30 seconds or until warm. Serve warm on its own or with a scoop of vanilla ice cream.
