  • 1 large egg

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light, fluffy, and pale, approximately 2-3 minutes.
  3. Beat in the egg and vanilla extract, mixing until completely combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt until evenly blended.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just incorporated. Be careful not to overmix.
  6. Gently fold in the chopped mango, ensuring it is evenly distributed throughout the dough.
Baking
  1. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about two inches apart.
  2. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers appear set but still soft.
  3. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

For best results, ensure butter is softened and avoid overbaking for a chewy texture. These cookies are great warm or at room temperature.
