Preparation
  1. Preheat the oven to 350°F (175°C) and position a rack in the center.
  2. Grease an 8x8-inch baking dish with olive oil.
  3. In a large bowl, whisk together the eggs with a pinch of salt and pepper until slightly frothy but not foamy.
  4. Stir in the chopped vegetables, shredded cheese, and optional meat. Mix until evenly distributed.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
Cooking
  1. Bake for 25–30 minutes or until the eggs are set and the top is golden.
  2. Allow to cool in the pan for a few minutes, then slice into bars.

Notes

For lower-carb versions, incorporate more greens and reduce other vegetables. Store bars in an airtight container for up to 4 days, or freeze for longer storage.
