Dry Ingredients
  • 2 cups whole wheat flour Provides a hearty base.
  • 1 tbsp baking powder No yeast or rising time required.

  • 2 tsp cinnamon Main flavoring.
Wet Ingredients
  • 1/4 cup honey Adds sweetness and moisture.
  • 1 cup milk (or almond milk) Brings the dough together.
  • 2 tbsp melted coconut oil Adds tenderness.
Optional Ingredients
  • 1/4 cup raisins Optional for added sweetness.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine whole wheat flour, baking powder, and salt; stir until evenly mixed.
Forming the Dough
  1. Add honey, milk (or almond milk), and melted coconut oil. Stir until a cohesive, slightly tacky dough forms.
Rolling and Adding Cinnamon
  1. Lightly flour a surface and roll the dough into a rectangle of even thickness.
  2. Sprinkle cinnamon evenly over the dough. If using, scatter raisins on top.
Shaping the Rolls
  1. Roll the dough tightly from one long edge into a log.
  2. Slice the log into 8 equal pieces.
  3. Place the rolls cut-side up in the greased baking dish, spaced slightly apart.
Baking
  1. Bake for 20-25 minutes until golden brown, checking that they are not doughy in the center.

Notes

These rolls are best served warm, and are forgiving if not overbaked. Consider using different milk types or adjusting the cinnamon quantity to taste.
