Preparation
- Preheat the oven to 350°F (175°C). Line a loaf pan.
- In a large bowl, whisk the yogurt and eggs together until smooth and silky, without any visible streaks.
- Add the cornstarch, and if using, the vanilla extract and sugar. Whisk until lump-free and glossy.
- Pour the batter into the lined loaf pan and tap gently on the counter to remove air bubbles.
Baking
- Bake for 50–60 minutes until the top is golden and the center is set.
- Allow the cake to cool completely before slicing.
Notes
For best results, cool the loaf fully for clean slices. Store slices in an airtight container in the fridge. This cake slices better after chilling.
