  • 1 cup plain Greek yogurt Thick, plain Greek yogurt for moisture and flavor
  • 2 large eggs For structure

  • 1 cup almond flour Keeps the crumb tender
  • 1 teaspoon baking powder Provides lift
  • 1/2 teaspoon salt Prevents the loaf from tasting flat

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a mixing bowl, combine the Greek yogurt and eggs. Whisk until the mixture is smooth and creamy.
Mixing and Baking
  1. Add the almond flour, baking powder, and salt. Stir until just combined, without dry pockets.
  2. Scrape the batter into the prepared loaf pan and smooth the top with a spatula.
  3. Bake for 30–35 minutes, until the top is golden and a toothpick inserted in the center comes out clean.
  4. Let the loaf cool in the pan for 10 minutes, then lift it to a wire rack using the parchment. Cool completely before slicing.

Ensure to cool the loaf completely before slicing to achieve clean slices. Use parchment paper for easy release from the pan.
