Preparation
  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a mixing bowl, combine the Greek yogurt and eggs until smooth.
  3. Gradually add almond flour, baking powder, and salt, stirring until a cohesive dough forms. Mix in olive oil if desired.
  4. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Place the loaf in the oven and bake for 30-35 minutes until golden brown and a toothpick inserted in the center comes out clean.
  2. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  3. Once cooled, slice and serve with toppings or enjoy as is.

Store the bread in an airtight container in the fridge for up to a week or freeze slices for longer storage. For best results, cool completely before slicing.
