Preparation
- Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
- In a mixing bowl, combine the Greek yogurt and eggs until smooth.
- Gradually add almond flour, baking powder, and salt, stirring until a cohesive dough forms. Mix in olive oil if desired.
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Place the loaf in the oven and bake for 30-35 minutes until golden brown and a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Once cooled, slice and serve with toppings or enjoy as is.
Notes
Store the bread in an airtight container in the fridge for up to a week or freeze slices for longer storage. For best results, cool completely before slicing.
