- Slice zucchini into even, bite-size rounds.
- Lay out the slices, sprinkle with salt, and let them sit briefly to draw out moisture.
- Blot the zucchini slices with a towel to remove excess moisture.
- Combine zucchini with minced garlic and black pepper, mixing well.
- Toss zucchini rounds with olive oil until lightly coated.
Baking
- Arrange the zucchini rounds on the baking sheet in a single layer.
- Bake for 20 minutes or until the bottoms are golden and the edges are crispy. The centers should be tender.
- Let them cool for a couple of minutes before serving.
Notes
