  • 1 tablespoon fresh parsley, chopped Alternatively, use 1 teaspoon dried parsley.
  • Salt and pepper, to taste Use sparingly to avoid overpowering the zucchini.

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the grated zucchini with a pinch of salt. Allow it to sit for about 10 minutes to release excess moisture.
  3. After 10 minutes, use a clean kitchen towel or paper towels to squeeze out the moisture from the zucchini.
  4. In the same bowl, add the breadcrumbs, Parmesan cheese, minced garlic, beaten egg, parsley, and season with salt and pepper. Mix until well combined.
  5. Using your hands, shape the mixture into small patties, about 2 inches in diameter, and place them on the prepared baking sheet.
Cooking
  1. Bake in the preheated oven for 15-20 minutes, flipping halfway, until they are golden brown and crispy.
  2. Remove from the oven and let them cool slightly before serving.

Notes

These bites can be served hot or at room temperature and pair well with dips like tzatziki, hummus, or marinara sauce. Store leftovers in an airtight container for up to three days.
