Ingredients
  

Brownie Base
  • 1 cup medjool dates Pitted and softened if needed
  • ½ cup almond butter (or other nut butter) Choose a creamy nut butter for best texture
  • ¼ cup cocoa powder For rich chocolate flavor
  • 1 teaspoon vanilla extract For flavor enhancement
Ganache Topping
  • ½ cup vegan chocolate chips For the ganache layer
  • ¼ cup non-dairy milk To melt the chocolate
Garnish
  • chopped hazelnuts Optional, for topping

Method
 

Preparation
  1. Pit the dates and soak them in warm water for 10 minutes if they feel dry or firm, then drain well.
  2. In a food processor, blend the pitted dates, nut butter, cocoa powder, and vanilla extract until a sticky dough forms.
  3. Line a small loaf pan or square container with parchment paper and press the dough evenly into the pan.
  4. Freeze the pressed mixture for 10-15 minutes to firm it up.
Making the Ganache
  1. Melt vegan chocolate chips and non-dairy milk in the microwave or double boiler until smooth.
  2. Pour the ganache over the chilled brownie base and spread evenly. Optionally, sprinkle with chopped hazelnuts.
Setting and Serving
  1. Refrigerate the brownies for 5-10 minutes until the ganache is set.
  2. Lift out of the pan using the parchment paper, cut into squares, and serve.

Notes

Store in an airtight container in the refrigerator for best results. You can also freeze these brownies for longer storage.
